Chicken and Grape Lettuce Wrap

With the beginning of daylight savings and warmer weather knocking at our door, (lets hope!), we start thinking about spending more of our time outside and less time inside. With that in mind, EXPRESS MEALS was created.

Fast, container friendly, prepare ahead, and in bulk was my focus. Some of these ideas are from our wonderful staff and some from our weight loss patients. They have been tested (by myself) and are now recommended.

Step One- On the way home from work stop at the market and purchase a rotisserie chicken.

Step Two- Go to the produce section and select green or red grapes and a head of Boston lettuce.

*At home, discard the chicken skin and remove the meat from the bones. Cut into small to medium size bites. Place in a bowl.

* Measure three tablespoons of reduced fat mayonnaise and add to the bowl of diced chicken.

* The next step is optional. I like heat in my food so I would also add some diced fresh jalapeno pepper and red onion.

* Mix it all together.

* Place a clean and dried leaf of Boston lettuce on a plate. Weigh your selected portion size of chicken and then add however many grapes you choose.

*Mix, then carefully scoop onto the lettuce. Roll it like a burrito and bite into it!
