Citrus Salad

Ingredients-
6 Pieces of citrus (a mix of yellow & red grapefruits & oranges)
3 Tablespoons of Red Wine Vinegar
4 Tablespoons of Red Onion cut into tiny bits
1 Tablespoon of smooth Dijon Mustard
3 Tablespoons of Extra Virgin Olive Oil
Salt & Pepper to taste
3 oz. Feta (Crumbled)
3 Tablespoons of Fresh Mint, chopped or cut

With a sharp knife cut the top and bottom of the fruit. Now you will have a flat bottom.

Starting from the top of the fruit, take your knife and cut down between the flesh of the fruit and peel.

Repeat this process all around the fruit.

Gently place your fruit on its side and starting from the bottom working your way up, take your sharp knife and cut down creating circles of sliced fruit.

In a separate bowl, add your Dijon mustard and the Red wine vinegar. Mix with a whisk.

While whisking slowly add in your extra virgin olive oil. Incorporate well.

Toss in your fresh Herbs and gently mix with a spoon.

Place your fruit on a beautiful platter and drizzle the Dijon dressing on top.

Sprinkle the Red onion pieces and Feta and now its ready to eat.

This salad can be eaten all week.
It would fulfill a Fruit selection and Protein.
